For the Red Velvet Cake
- 2½ cups (315g) all-purpose flour
- 2 tbsp (15g) unsweetened cocoa powder
- 1½ cups (300g) granulated sugar
- 1 tsp baking soda
- 1 tsp baking powder
- ½ tsp salt
- 2 large eggs, room temperature
- 1 cup (240ml) buttermilk, room temperature
- 1 cup (240ml) vegetable oil
- 2 tsp vanilla extract
- 1 tsp white vinegar
- 2 tbsp red food coloring (liquid) or 1 tbsp gel food coloring
🧀 Cream Cheese Frosting
- 16 oz (450g) cream cheese, softened
- 1 cup (225g) unsalted butter, softened
- 4 cups (480g) powdered sugar
- 2 tsp vanilla extract
- Pinch of salt
🎂 Decoration
- Reserved red velvet cake crumbs
- White chocolate curls (optional)
- Fresh strawberries (optional)
👩🍳 Instructions
Step 1: Prepare the Cake
- Preheat the oven to 350°F (175°C).
- Grease and line two 9-inch (23cm) round cake pans with parchment paper.
- In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
- In another bowl, beat the eggs and sugar until smooth.
- Add the vegetable oil, buttermilk, vanilla extract, vinegar, and red food coloring. Mix until fully combined.
- Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.
Step 2: Bake
- Divide the batter evenly between the prepared pans.
- Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
- Let the cakes cool in the pans for 10 minutes.
- Transfer to a wire rack and cool completely before frosting.
Step 3: Make the Cream Cheese Frosting
- Beat the softened cream cheese until smooth.
- Add the butter and beat until light and fluffy.
- Gradually mix in the powdered sugar.
- Add the vanilla extract and salt.
- Beat for 3–5 minutes until the frosting is creamy and fluffy.
Step 4: Assemble the Cake
- Trim the tops of the cake layers if needed to make them level.
- Place one cake layer on a serving plate.
- Spread a generous layer of cream cheese frosting.
- Add the second cake layer.
- Frost the top and sides of the cake evenly.
- Press the reserved red velvet crumbs around the sides and sprinkle some on top.
- Decorate with white chocolate curls and fresh strawberries if desired.
