KitKat Cake

Ingredients

For the Chocolate Cake

  • 2 cups (250g) all-purpose flour
  • ¾ cup (65g) unsweetened cocoa powder
  • 2 cups (400g) granulated sugar
  • 2 tsp baking powder
  • 1½ tsp baking soda
  • 1 tsp salt
  • 2 large eggs
  • 1 cup (240ml) whole milk
  • ½ cup (120ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 cup (240ml) hot coffee (or hot water)

🍫 Chocolate Buttercream

  • 1 cup (225g) unsalted butter, softened
  • 3½ cups (440g) powdered sugar
  • ¾ cup (65g) unsweetened cocoa powder
  • 2 tsp vanilla extract
  • ¼ cup (60ml) heavy cream
  • Pinch of salt

🍫 Chocolate Ganache

  • 200g milk chocolate, chopped
  • 200ml heavy cream

🍬 Decoration

  • 18–20 full-size KitKat bars (depending on cake size)
  • 2 cups (300g) mini KitKat pieces or chopped KitKat bars
  • Chocolate shavings (optional)
  • Chocolate sprinkles (optional)

👩‍🍳 Instructions

Step 1: Prepare the Cake

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line two 9-inch (23cm) round cake pans with parchment paper.
  3. In a large bowl, whisk together the flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. Add the eggs, milk, vegetable oil, and vanilla extract. Beat until smooth.
  5. Slowly pour in the hot coffee while mixing. The batter will be thin.
  6. Divide the batter evenly between the prepared pans.

Step 2: Bake

  1. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  2. Let the cakes cool in the pans for 10 minutes.
  3. Transfer to a wire rack and cool completely.

Step 3: Make the Chocolate Buttercream

  1. Beat the softened butter until creamy.
  2. Add the cocoa powder and mix well.
  3. Gradually beat in the powdered sugar.
  4. Add the vanilla extract, heavy cream, and salt.
  5. Beat for 3–5 minutes until light and fluffy.

Step 4: Make the Ganache

  1. Heat the heavy cream until it just begins to simmer.
  2. Pour it over the chopped milk chocolate.
  3. Let stand for 2 minutes.
  4. Stir until smooth and glossy.
  5. Allow to cool slightly until thick but pourable.

Step 5: Assemble the Cake

  1. Place one cake layer on a serving plate.
  2. Spread a thick layer of chocolate buttercream.
  3. Add the second cake layer.
  4. Frost the top and sides of the cake with the remaining buttercream.
  5. Arrange the KitKat bars upright around the sides of the cake, pressing them gently into the frosting.
  6. Pour the chocolate ganache over the top, allowing it to spread naturally.
  7. Sprinkle the top with chopped KitKat pieces and chocolate shavings.
