Funfetti Cake

Ingredients

For the Funfetti Cake

  • 2½ cups (315g) all-purpose flour
  • 2½ tsp baking powder
  • ½ tsp salt
  • 1 cup (225g) unsalted butter, softened
  • 1¾ cups (350g) granulated sugar
  • 4 large eggs, room temperature
  • 1 tbsp vanilla extract
  • 1 cup (240ml) whole milk, room temperature
  • ½ cup (80g) rainbow sprinkles (jimmies, not nonpareils)

🧁 Vanilla Buttercream Frosting

  • 1½ cups (340g) unsalted butter, softened
  • 5 cups (600g) powdered sugar
  • 2 tsp vanilla extract
  • 3–4 tbsp (45–60ml) heavy cream or milk
  • Pinch of salt

🌈 Decoration

  • ½ cup rainbow sprinkles
  • Buttercream swirls
  • White chocolate curls (optional)
  • Colorful candy decorations (optional)

👩‍🍳 Instructions

Step 1: Prepare the Cake

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line two 9-inch (23cm) round cake pans with parchment paper.
  3. In a medium bowl, whisk together the flour, baking powder, and salt.
  4. In a large bowl, beat the butter and sugar until light and fluffy (about 3–4 minutes).
  5. Add the eggs one at a time, beating well after each addition.
  6. Mix in the vanilla extract.
  7. Gradually add the dry ingredients, alternating with the milk, beginning and ending with the flour mixture.
  8. Gently fold in the rainbow sprinkles using a spatula. Do not overmix.

Step 2: Bake

  1. Divide the batter evenly between the prepared cake pans.
  2. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Cool the cakes in the pans for 10 minutes.
  4. Transfer to a wire rack and let them cool completely.

Step 3: Make the Vanilla Buttercream

  1. Beat the softened butter until creamy.
  2. Gradually add the powdered sugar.
  3. Mix in the vanilla extract.
  4. Add the heavy cream and salt.
  5. Beat for 3–5 minutes until the frosting is smooth, light, and fluffy.

Step 4: Assemble the Cake

  1. Place one cake layer on a serving plate.
  2. Spread a generous layer of vanilla buttercream over the top.
  3. Place the second cake layer on top.
  4. Frost the top and sides of the cake evenly.
  5. Pipe decorative buttercream swirls around the top edge.
  6. Cover the sides and top with rainbow sprinkles.
  7. Decorate with white chocolate curls or colorful candies if desired.
