Red Velvet Cake

Ingredients

For the Red Velvet Cake

  • 2½ cups (315g) all-purpose flour
  • 2 tbsp (15g) unsweetened cocoa powder
  • 1½ cups (300g) granulated sugar
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ½ tsp salt
  • 2 large eggs, room temperature
  • 1 cup (240ml) buttermilk, room temperature
  • 1 cup (240ml) vegetable oil
  • 2 tsp vanilla extract
  • 1 tsp white vinegar
  • 2 tbsp red food coloring (liquid) or 1 tbsp gel food coloring

🧀 Cream Cheese Frosting

  • 16 oz (450g) cream cheese, softened
  • 1 cup (225g) unsalted butter, softened
  • 4 cups (480g) powdered sugar
  • 2 tsp vanilla extract
  • Pinch of salt

🎂 Decoration

  • Reserved red velvet cake crumbs
  • White chocolate curls (optional)
  • Fresh strawberries (optional)

Step 1: Prepare the Cake

  1. Preheat the oven to 350°F (175°C).
  2. Grease and line two 9-inch (23cm) round cake pans with parchment paper.
  3. In a large bowl, whisk together the flour, cocoa powder, baking soda, baking powder, and salt.
  4. In another bowl, beat the eggs and sugar until smooth.
  5. Add the vegetable oil, buttermilk, vanilla extract, vinegar, and red food coloring. Mix until fully combined.
  6. Gradually add the dry ingredients to the wet ingredients and mix until just combined. Do not overmix.

Step 2: Bake

  1. Divide the batter evenly between the prepared pans.
  2. Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
  3. Let the cakes cool in the pans for 10 minutes.
  4. Transfer to a wire rack and cool completely before frosting.

Step 3: Make the Cream Cheese Frosting

  1. Beat the softened cream cheese until smooth.
  2. Add the butter and beat until light and fluffy.
  3. Gradually mix in the powdered sugar.
  4. Add the vanilla extract and salt.
  5. Beat for 3–5 minutes until the frosting is creamy and fluffy.

Step 4: Assemble the Cake

  1. Trim the tops of the cake layers if needed to make them level.
  2. Place one cake layer on a serving plate.
  3. Spread a generous layer of cream cheese frosting.
  4. Add the second cake layer.
  5. Frost the top and sides of the cake evenly.
  6. Press the reserved red velvet crumbs around the sides and sprinkle some on top.
  7. Decorate with white chocolate curls and fresh strawberries if desired.
