Ingredients
For the Garlic Butter Shrimp
- 1 lb (450g) large shrimp, peeled and deveined
- 2 tablespoons olive oil
- 2 tablespoons unsalted butter
- 4 garlic cloves, minced
- 1 teaspoon paprika
- ½ teaspoon chili flakes (optional)
- Salt and black pepper, to taste
- 1 tablespoon lemon juice
- 1 tablespoon chopped fresh parsley
For the Pan-Seared Salmon
- 2 salmon fillets (6 oz/170g each)
- 1 tablespoon olive oil
- 1 tablespoon butter
- 1 teaspoon garlic powder
- ½ teaspoon paprika
- Salt and black pepper, to taste
- 1 teaspoon Italian seasoning
- Lemon wedges, for serving
For the Seared Scallops
- 8–10 large sea scallops
- 1 tablespoon olive oil
- 1 tablespoon butter
- Salt and black pepper, to taste
Garlic Herb Butter Sauce
- 3 tablespoons unsalted butter
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 teaspoon Dijon mustard
- 1 teaspoon chopped parsley
- ½ teaspoon dried thyme
Instructions
Step 1: Prepare the Seafood
- Pat the shrimp, salmon, and scallops dry with paper towels.
- Season all seafood with salt, pepper, paprika, and garlic powder.
Step 2: Cook the Salmon
- Heat olive oil in a large skillet over medium-high heat.
- Place the salmon skin-side down and cook for 4–5 minutes.
- Flip carefully, add the butter, and cook for another 3–4 minutes, basting with the melted butter until the salmon flakes easily.
Step 3: Cook the Shrimp
- In another skillet, heat olive oil and butter.
- Sauté the garlic for 30 seconds.
- Add the shrimp and cook 2–3 minutes per side until pink and opaque.
- Stir in the lemon juice and parsley.
Step 4: Sear the Scallops
- Heat olive oil in a hot skillet.
- Add the scallops without overcrowding the pan.
- Cook 2–3 minutes per side until a deep golden crust forms.
- Add the butter during the last minute and spoon it over the scallops.
Step 5: Make the Garlic Herb Butter Sauce
- Melt the butter in a small saucepan.
- Add the garlic and cook for 30 seconds.
- Stir in the lemon juice, Dijon mustard, parsley, and thyme.
- Simmer for 1–2 minutes.
Step 6: Assemble the Platter
- Arrange the salmon, shrimp, and scallops on a large serving platter.
- Drizzle with the garlic herb butter sauce.
- Garnish with fresh parsley and lemon wedges.
- Serve immediately with roasted vegetables, rice, or crusty bread.
