Ingredients

For the Garlic Butter Shrimp

  • 1 lb (450g) large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 2 tablespoons unsalted butter
  • 4 garlic cloves, minced
  • 1 teaspoon paprika
  • ½ teaspoon chili flakes (optional)
  • Salt and black pepper, to taste
  • 1 tablespoon lemon juice
  • 1 tablespoon chopped fresh parsley

For the Pan-Seared Salmon

  • 2 salmon fillets (6 oz/170g each)
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • 1 teaspoon garlic powder
  • ½ teaspoon paprika
  • Salt and black pepper, to taste
  • 1 teaspoon Italian seasoning
  • Lemon wedges, for serving

For the Seared Scallops

  • 8–10 large sea scallops
  • 1 tablespoon olive oil
  • 1 tablespoon butter
  • Salt and black pepper, to taste

Garlic Herb Butter Sauce

  • 3 tablespoons unsalted butter
  • 2 garlic cloves, minced
  • 1 tablespoon lemon juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon chopped parsley
  • ½ teaspoon dried thyme

Instructions

Step 1: Prepare the Seafood

  1. Pat the shrimp, salmon, and scallops dry with paper towels.
  2. Season all seafood with salt, pepper, paprika, and garlic powder.

Step 2: Cook the Salmon

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Place the salmon skin-side down and cook for 4–5 minutes.
  3. Flip carefully, add the butter, and cook for another 3–4 minutes, basting with the melted butter until the salmon flakes easily.

Step 3: Cook the Shrimp

  1. In another skillet, heat olive oil and butter.
  2. Sauté the garlic for 30 seconds.
  3. Add the shrimp and cook 2–3 minutes per side until pink and opaque.
  4. Stir in the lemon juice and parsley.

Step 4: Sear the Scallops

  1. Heat olive oil in a hot skillet.
  2. Add the scallops without overcrowding the pan.
  3. Cook 2–3 minutes per side until a deep golden crust forms.
  4. Add the butter during the last minute and spoon it over the scallops.

Step 5: Make the Garlic Herb Butter Sauce

  1. Melt the butter in a small saucepan.
  2. Add the garlic and cook for 30 seconds.
  3. Stir in the lemon juice, Dijon mustard, parsley, and thyme.
  4. Simmer for 1–2 minutes.

Step 6: Assemble the Platter

  1. Arrange the salmon, shrimp, and scallops on a large serving platter.
  2. Drizzle with the garlic herb butter sauce.
  3. Garnish with fresh parsley and lemon wedges.
  4. Serve immediately with roasted vegetables, rice, or crusty bread.
