
Ingredients
- 8 lamb loin chops
- 3 tablespoons olive oil
- 4 garlic cloves, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon fresh thyme
- Juice of ½ lemon
- 1 teaspoon kosher salt
- ½ teaspoon black pepper
Instructions
Step 1
In a bowl, combine olive oil, garlic, rosemary, thyme, lemon juice, salt, and pepper.

Coat the lamb chops with the marinade and refrigerate for at least 1 hour.
Step 3
Preheat a grill or cast-iron skillet over medium-high heat.
Step 4
Cook the lamb chops:
- 3–4 minutes per side for medium-rare
- 4–5 minutes per side for medium
Step 5
Transfer the chops to a plate and let them rest for 5 minutes before serving.
Step 6
Garnish with fresh rosemary and serve with roasted vegetables, mashed potatoes, or a fresh salad.
